For the best flavor, texture, and safety — follow these detailed steps.
1. Store in a Cool, Dry Place. Biltong should always be kept in a cool, dry environment, away from direct sunlight, heat sources, and humidity. Excess heat and moisture can speed up spoilage or cause mold.
2. Choose the Right Storage Method, Paper Bag (Breathable Storage), Place your biltong in a clean brown paper bag. The paper allows air circulation and naturally absorbs excess moisture, which helps preserve the biltong’s texture.
Tip: Keep the paper bag in a cupboard or pantry that stays cool and dry. Airtight Container (Moist Storage)
If you prefer your biltong slightly softer or moister, store it in an airtight container. Glass jars, airtight plastic containers, or vacuum-sealed bags work well.
Tip: Add a small piece of paper towel inside the container to absorb any moisture and prevent mold.
3. Avoid Plastic Bags, Do not store biltong in regular plastic bags.Plastic traps moisture and creates an environment where mold can grow quickly.
4. Shake it Up (For Paper Bags), If using a paper bag: Shake or turn the bag once daily.
